It's National Gingersnap Cookie Day

One of my dad's FAVORITE cookies is the gingersnap.  It's not really that popular with the younger generation, but I remember them always being in my grandmother's cookie jar and when they are baking the aroma of cinnamon, cloves and ginger just brings back some of my favorite childhood memories!


There are many recipes on the internet, but here's one that I've used and that always seems to come out soft and chewy!

12 tablespoons margarine (or butter)
2 cups sugar
2 eggs
1/2 cup molasses
3-3/4 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons ground cloves
2 teaspoons ground ginger

Cream together the margarine and sugar until light and fluffy. Beat in eggs.  Add molasses and sifted dry ingredients.  Mix well.

Roll into one inch balls and then dip in granulated sugar.

Place on greased cookie sheet and bake at 325 degrees for 10-12 minutes. 

Makes 85 cookies!!

I absolutely LOVE gingersnap cookies and I have this exact recipe. Isn't it to die for. They look scrumptious....makes me want to go make a batch. :)
